No Bake Carrot Cake

I haven’t bake or make any cakes for quite sometime now..with another bun in the oven, the cake oven stays barren..haha

So, there we were at my mom’s. Well, it was my brother’s birthday. We decided to make a cake that mom could indulge in (she’s been on a strict diet for a few years now to get healthy). So, we decided to make this No Bake Carrot Cake from Trinity’s Kitchen. You can look up for her video on youTube.

The cake is pretty simple to make, but let me ensure you it IS rich in taste and it is something you could really indulge in. It tastes even better after a few days in the fridge as it sets well.

Decoration was pretty decent. Covered the cake with some delicious creamy cashew and dates (combo) frosting. Topped with some walnuts, and some raisins around the cake as its border. And of course, what’s a birthday cake without some cake toppers for the birthday boy. The cake turned out beautifully. However the frosting was a bit challenging, I would make sure the dates were pitted before they are soaked so that they would really soften and blend a bit more easily. Other than that this is a really easy and tasty cake to assemble, enjoy! πŸ™‚

NO BAKE CARROT CAKE

Ingredients:
100g dates
100g walnuts
1 large carrot
1/4 tsp nutmeg (powder)
1/2 tsp ginger (powder)
1 tsp cinnamon (powder)
1 Tbsp coconut oil (frozen)
3 Tbsp ground almonds

How to:
1. Soak dates and walnuts in water for about 2 hours.
2. Drain dates and walnuts.
3. In the food processor, combine the dates, walnuts and grated carrots.
4. Add in nutmeg, ginger, cinnamon.
5. Stir and fold in the coconut oil and
ground almonds.
6. Shape the mixture into a cake.
7. Let it set in the fridge for as long as you want.

THE FROSTING

Ingredients:
Handful Cashew nuts
Handful dates
1 tsp Vanilla extract
Whole Walnuts and raisins (for decoration)

How to:
1. Soak dates and cashews in water for about 2 hours.
2. Drain dates and cashews.
3. Blend together with vanilla extract until creamy.
3. Spread onto cake as desired.
4. Place walnuts and raisins for decoration.

*Makes a nice petit cake (around 5″)

 

 

 

LEGO cake

hi there!!! how I missed blogging here! It has been really looooong since I last posted. I am still baking and decorating, the usual stuff, nothing to fancy yet not too shabby..heheh..been working on a few projects here n there..the kids are growing, 2 toddlers in the house ~ means hand are full, schedules are tight, lots of stuff to do and learn πŸ˜‰

here’s a LEGO inspired cake complete with a lego man stick. this is the usual rainbow cake, with all 6 colourful layers in it πŸ˜‰

Ben10 is number 1

Rainbow cake is getting “numbered” again πŸ˜‰ This time it is the number “1”..Nurul from kuantan requested the cake for her nephew’s first birthday πŸ™‚

As usual I baked a Square rainbow cake and layered them to start with..and cut into pieces like these

Arrange them into the number 1 (cut off a bit to make it perfectly number 1 and glued the pieces together with icing)

Covered the cake with icing..and now I love piping the sides of a rainbow cake with stripes of colors πŸ˜‰

Nurul requested a Ben10 themed cake..and she wanted to put the birthday boy s picture on the cake..but since it was a very last minute order, I didn’t have time to prepare the edible image for the cake..so I gave her an alternative..photo flags to stick on the cake

Making a numbered cake is always fun..this time I’m doing a double digit cake – 63..it was a challenge for me as I’m used to make cheerful and cute single digit cakes for kids πŸ˜‰

This 63 numbered cake is for a mom as a special gift from her kids..Kak Ida from bukit sekilau, Kuantan and her siblings wanted a number 63 cake for their mom..I feel happy to make the cake because I was given the freedom to use my creativity on this cake (every baker appreciates this i think..hehee)

At first I still had no idea on how to decorate the cake..even after the cake was baked I was still not inspired..hehe..but I kept on going..carved the cake into “63” (only after the cake was 100% done I realized a spot I forgot to carve on the number 3)

As I was deciding the color for the cake..the design of the just came to me..yay! The theme was pink and I suddenly was in the mood for roses πŸ˜‰

And I was in the mood for chocolates..so here’s the cake fully decorated with buttercream roses and heart shaped chocolates all over..I hope it’s not too much..LoL

Send-a-cake: mini doll cake

I just love send-a-cake requests! Today I sent off this cute mini doll cake as a surprise for the birthday girl from someone special who couldn’t be with her on her special day..I love making people happy and making relationships stronger πŸ˜‰

I purposely make the writing in a slightly darker shade to make it subtle rather than contrasting colors as I want eyes to focus on the doll cake, yet make it a personalised cake especially for the birthday girl..it is special but not too loud..I think..LOL

Halloween Cake

Got a request to make a Halloween themed cake, and I was all up for it πŸ˜‰ when u think of Halloween, what comes to your mind? I pictured black cats, spiders n their creepy webs,Β  witches, ghosts, graveyards, and of course those carved pumpkins πŸ˜€

The color theme was black and orange (typically Halloween rite ;p) I first covered the cake with orange buttercream..then piped black and darker orange stripes around the cake

Draw a spiderweb and a spider in it (piped all “black things” on the cake using ganache”..that is one tasty spider!)

Big n small

Got a request to make THE Chocolate Cake in larger size..as always, I forgot to weight the cake but I estimated the large one is around 2 kilos and the smaller or regular sized cake is around a kilo..

For the large cake I didn’t do much..because its owner want it to be plain..but I just have to add a bit of color to it..hehe..I feel red is always great looking againts black πŸ˜‰

And for the regular sized cake, it was requsted to be decorated with “lotsa love” as I did on the red velvet cheesecake earlier

Cake project: Elmo cake

Elmo..either u love him or u despise him..hehe..he’s got a lot of fans out there..that’s for sure πŸ˜‰

Nurul requested the cake to be round..usually we would make elmo cakes with elmo’s head shaped..so round elmo it is πŸ˜‰

Baked a moist chocolate cake (1 batter) in a deep 10 inch pan and crumb coat it with red buttercream..I used a combination of americolor red colors – red red, super red and a bit of maroon..and used the grass tip to pipe elmo’s fur

I noticed elmo has a very large nose..so I cut out a rectangular piece of cake (leftovers from previous cake project)..shaped it into a large round nose and coat with orange buttercream

Put the nose in the freezer for a while, and once the buttercream hardens a bit, took it out and smoothed it using the back of a butter knife (or a spatula if u like)..and I piped some black buttercream for the eyes too πŸ˜‰

Assemble the parts and here we have an elmo cake..the eyeballs are just blobs of buttercream

It kind a look like any other monster from seasame street..hehe..if it is in blue it would definitely look like the cookie monster or even grover..LOL

hannah montana guitar cake

mr amirΒ requestedΒ a hannah montana themed cake for her daughter, and I offered him a hannah montana guitar cake instead! i just love cake carving..have toΒ seizeΒ this opportunity of a cake project! πŸ˜‰

went to the baking supplies shop to find the largest cake board, and all they have was a 13×18 board..ah well, that’ll just have to do πŸ˜€

rainbow on rainbow cake

it’s becoming a trend now to have rainbows on rainbow cakes..i’ve been getting a lot of request for rainbow deco on cake lately..it IS rather cute I must say πŸ˜‰

another upcoming trend on rainbow cakes decoration are colourful and bright colours covering the whole cake! some people are crazy over it, but it’s just not my style πŸ˜‰ mine is smple n cute..or is it..hehe πŸ˜€ Β i do believeΒ  in “less is more” πŸ˜‰
